After much deliberation here is our dough recipe.
00 Flour Shipton Mill
60% cool water (e.g. 1KG flour, 600g of water)
1.5% Olive oil
My final piece of dough weighs in at 1,600 grams enough for 7 220 to 240g pizzas
Autolyse for 1 hour.
Rise at 14 degrees (in my cellar) for 24 hours
Knead for 5 mins and then leave to prove at room temperature for about 18 hours
Divide dough into 240g and shape into balls
So, for 1KG of flour that would be 30g salt, 1.5g yeast, 600g of water, 15g oil. Knead
vigourously for 5 mins
We all love pizza
Our charity pizza nights bring communities together with great food and we
raise lots of dough for charity.
Our next event on June 26th is going to be quite a party. We have hired a wood
fired oven and we have lots of prizes from our online raffle. Also, on the
day, one of you lucky pizza eaters will find a golden ticket in their box!
